Hey friends!
Gosh… it has been forevveerr since I have done one of these little posts. I am in a bit of a hurry this morning so let’s get right to it!
Does anyone else have the hardest time catching up after vacation? I am not complaining AT ALL but I just can not seem to get back
Here is what I had yesterday! As always, thanks Jenn!!!

Breakfast 8:30 am-
Van’s toasted waffle + AB + chia and flax + 1/2 banana and blueberries + drizzle of honey.
Workout-
This week our sorority has a free “wellness” week at Equinox! Oh my gosh. You guys. I love this gym. Like I never thought you could actually love a gym… but I think I could set up an air mattress in there and be set for life.
I tried a Major Black Dress workout class. Oh… it was not a joke let me tell you. It was like body pump on steroids. Loved it.
Snack 10:45 am-
So this weekend while I was driving back to Dallas, I listened to about a million Jillian Michaels podcasts. This is not an unusual activity for me… I probably listen to at least 2 a week. I love her. Anyways… in one of her podcasts she was talking about refueling and she said you need at least 10 grams of protein within that hour window of completing your workout.
Taking Jillian’s advice… I halved a ThinkThin protein bar to tide me over through my class until lunch for my 10 grams of protein + carbs. Have I mentioned that I have an addiction to these? They taste like a Snickers… sort of
. But they keep me uber full and I crave the Crunchy Peanut Butter flavor.
Lunch 12:40 pm-
Grilled salmon salad + fruit.
I wish I knew why this looked like there was barely anything on my plate? Let me assure you… my plate was stacked sky high. And I went back for seconds. Favorite Kappa lunch ever.
Snack 2:15 pm-
Still kinda hungry so I ate the other half of my ThinkThin bar.
Dinner 6:00 pm-
Parmesan chicken + sweet potato + cauliflower and broccoli cream casserole. Talk about a yummy dinner!!
Again.. Why does it look like I only ate 2 bites in this pic? Because I DEFINITELY had more than 2 bites.
Dessert-
Everyone take a moment to gasp. NOTHING sounded good to me for dessert. I had a bite of ice cream, a bite of chocolate pudding and finally settled on some hot tea. Haha.
But, after my gigantic unpacking adventure… I obviously needed to refuel and made my yummy microwave s’more! I love s’mores SO much… if there is not a campfire… the microwave will do. And I think it is kinda healthy? I use dark chocolate? Yes?!?!?
Lets call it my skinny s’more. Mmmmmkkaaaay? It is super hard to make. Assemble. Microwave 10 seconds. Eat!

Skinny s’more. Get in my bellayyyyy. Except I’d need to eat about 40 of them to be satisfied. My sweet tooth is insatiable.

Yummy those smores look good. I love Jillian Michaels and I didn’t know there was a specific 10g amount of protein that you needed after a workout and that it had to be within the hour, very interesting. I’m reading her new book at the moment.
